Cucumber Tea Vinaigrette
Ingredients:
3 pcs small cucumbers
1 tsp sesame oil
1 tsp soy sauce
2 tbsp vinegar (rice wine or cane)
1 cup brewed tea (around 2 bags)
1 tsp toasted sesame seeds
A dash of hot pepper sauce
Procedures
- Peel the cucumbers and slice to desired thickness.
- Brew the tea in one cup water (use measuring cup and not the teacup). Set aside and let cool to room temperature.
- Toast the sesame seeds in a greaseless pan. Set aside and let cool to room temperature.
- In a bowl mix together the vinegar, sesame oil and soy sauce. Whisk in the cooled tea.

Stir Fried Shrimp in Tea Leaves
Ingredients:
2 tsp tea leaves
1/3 cup water
1/2 kilo medium-sized shrimps
1/2 tsp salt
1/2 tsp cornstarch
2 tbsp soy sauce
2 tbsp brewed tea
2 tbsp chicken stock
1 tsp sesame oil
1 tsp sugar
1/2 tsp white pepper
Peanut oil
1/4 tsp ginger grated
1/2 green bell pepper
1/2 red bell pepper
Procedures
- Boil 1/3 cup water and pour over the 2 tsp tea leaves.
- Let the tea mixture stand for 10 minutes then strain. Set aside the tea leaves, do not throw them away.
- Shell and devein the shrimps, rinse under warm water and pat dry with paper towels.
- Wrap the shrimps well in cornstarch and salt. Be sure that the shrimps are patted dry so as not to make a sticky or gooey wrapped shrimp. Set aside for 15 minutes to marinate.
- In a bowl, mix the brewed tea, soy sauce, sesame oil, chicken broth, black and white pepper and sugar. Mix well and set aside. Heat the peanut oil in a wok and then add the grated ginger.
