Cucumber Tea Vinaigrette

Ingredients:

3 pcs small cucumbers
1 tsp sesame oil
1 tsp soy sauce
2 tbsp vinegar (rice wine or cane)
1 cup brewed tea (around 2 bags)
1 tsp toasted sesame seeds
A dash of hot pepper sauce

Procedures

  1. Peel the cucumbers and slice to desired thickness.
  2. Brew the tea in one cup water (use measuring cup and not the teacup). Set aside and let cool to room temperature.
  3. Toast the sesame seeds in a greaseless pan. Set aside and let cool to room temperature.
  4. In a bowl mix together the vinegar, sesame oil and soy sauce. Whisk in the cooled tea.
  5. Toss in the cucumbers to the vinaigrette mixture.
  6. Marinate the cucumber, cover and set aside for 2 hours before serving.
  7. Before serving toss in the cooled sesame seeds.

Stir Fried Shrimp in Tea Leaves

Ingredients:

2 tsp tea leaves
1/3 cup water
1/2 kilo medium-sized shrimps
1/2 tsp salt
1/2 tsp cornstarch
2 tbsp soy sauce
2 tbsp brewed tea
2 tbsp chicken stock
1 tsp sesame oil
1 tsp sugar
1/2 tsp white pepper
Peanut oil
1/4 tsp ginger grated
1/2 green bell pepper
1/2 red bell pepper

Procedures

  1. Boil 1/3 cup water and pour over the 2 tsp tea leaves.
  2. Let the tea mixture stand for 10 minutes then strain. Set aside the tea leaves, do not throw them away.
  3. Shell and devein the shrimps, rinse under warm water and pat dry with paper towels.
  4. Wrap the shrimps well in cornstarch and salt. Be sure that the shrimps are patted dry so as not to make a sticky or gooey wrapped shrimp. Set aside for 15 minutes to marinate.
  5. In a bowl, mix the brewed tea, soy sauce, sesame oil, chicken broth, black and white pepper and sugar. Mix well and set aside. Heat the peanut oil in a wok and then add the grated ginger.
  6. Heat the peanut oil in a wok and then add the grated ginger.
  7. Stir fry the shrimps in the peanut oil for a few minutes then add and stir fry the tea leaves. Continue stir frying until the shrimps turn pinkish in color.
  8. Add the diced green and bell peppers and stir fry for a minute.
  9. Push the stir fried shrimp and bell peppers to the side of the wok.
  10. Pour in the soy sauce mixture and bring to a boil.
  11. Mix in the shrimp, bell peppers and tea leaves well with the soy sauce mixture.
  12. Season to taste and remove from heat.
